Ingredients
- 8 oz Elbow macaroni
- 2 tbsp Butter
- 2 tbsp Flour
- 1 cup Whole milk
- 6 oz Sharp cheddar, shredded
- 1 oz American cheese, torn
- 1/2 tsp Fine salt
- 1/4 tsp Mustard powder
- Pinch Turmeric or paprika
Method
- Boil the elbows in salted water until just tender. Save 1/2 cup pasta water. Drain.
- In the same pot, melt butter. Whisk in flour for 60 seconds.
- Whisk in milk. Simmer until it coats a spoon, 2–3 minutes.
- Take off the heat. Stir in cheeses, salt, mustard, and paprika until glossy.
- Fold in pasta. Loosen with pasta water. Serve immediately.
