Nuggets, pizza, boxed mac — foods that look simple and hide breading systems, starch blends, and a lot of salt.
What reconstruction has to get right
- Breading that stays on after a freeze-thaw is a system: flour, starch, protein, then oil temperature. A bowl of breadcrumbs is not the same system.
- Frozen pizza sauce is reduced and seasoned for a 12-minute oven. Fresh sauce needs a shorter cook or it tastes raw.
- A box of mac and cheese is a cheese-powder emulsion. Milk + shredded cheddar will not behave the same without a little starch or sodium citrate.
Ingredient jobs in this category
- Starch. Crisp coating and sauce body.
- Salt. Often the main reason the bag tastes 'right.'
- Fat. Fry oil or cheese. Do not skip it and expect the same crust.
- Protein. Egg wash or milk powder helping breading stick.
