What reconstruction has to get right
- Restaurant names are trademarks. Pages describe a style of food, not a licensed formula.
- Chain sauces often use industrial smoke, coloring, and gums. Home versions use pantry stand-ins and should not claim identity.
- If we cannot see a label, we ask for one instead of inventing a confident recipe.

- Base sauce. Mayo, tomato, soy — the carrier.
- Acid. Pickle brine, vinegar, lemon.
- Sweet + heat. The chain-sauce signature more often than a rare spice.
- Texture. Emulsion or reduction so it clings to fries.
